Flavour of the month

My propensity for the sweet stuff has been shared with you all here, here and here. At the moment the fairest of them all is still the red velvet cupcake. I’m a bit surprised at this fact since I tend to be a bit fickle when it comes to sweets, and the flavour of the month rarely occupies my heart for as long as the red velvet has. Last weekend I tried my hand at baking a batch of these delicious beauties. I was a bit disappointed with the colour, as it turned out a brick red colour instead of the vibrant red that I was after. I will keep trying until I get this right. In the meantime if any of you have any tips on how to get the colour right, please do share!

  1. i had the same problems when i tried baking some red velvet pastries.. they said that you should use a food coloring paste (not liquid) to make the color rich red. haven't seen one around my city so i've never tried that way.. :)

  3. my brother makes these all the time. will ask him what special ingredients he uses because they are awesome. know he uses the hummingbird recipe if that helps.

  7. Made the cupcakes for the first time a few weeks ago and the colour came out perfectly. Mixed the cacao powder with the red food colouring to make a deep red paste, then added it to the batter. Comes out beet red and when you add the flower it lightens and becomes really vibrant.

  9. I've found that the trick to getting it really bright red is to use a LOT of food colouring. Good luck with your next batch :-)
